I’m a big seafood fan – scallops, catfish, tilapia – you name it, I love it! (Well, except for oysters.) Last week, I attended the Sea Best Seafood at Sunset event at 927 Events in Downtown Jacksonville, where I had the opportunity to learn about this locally owned, seafood supplier found in grocery stores across the country. All Sea Best Seafood is immediately frozen after it is caught, providing shoppers with high quality, delicious seafood.
Our night began with some delicious pre-dinner appetizers – a cheesy Buffalo Shrimp Dip served warm with chips and Scallop Egg Rolls in a tasty sweet and sour sauce. I would have never thought of using scallops for egg rolls, they were made with cabbage, bacon, green onions and cream cheese – what’s not to love?!
Next up, it was time for dinner and a live cooking demonstration courtesy of Chef Brian from the Sea Best Seafood kitchens . It was a great, informal way to learn about proper techniques when cooking with seafood.
Our first dish was Rice Fish Cakes made with lemon, long grain rice and diced flounder fillets. I was especially interested to learn that the rice cakes could be stored in the freezer for a few weeks before cooking – perfect for once a month cooking!
The next dish on the night’s menu was an Ahi Tuna Melt. I’m not a big fan of ahi tuna, so I was very apprehensive about this dish. Much to my surprise, I loved it…and cleaned my plate! It was very similar to chicken salad, but with tuna! I’m excited about making this dish soon – perfect for lunch!
The final dish of the night was Shrimp Butter with Pasta. With thin spaghetti noodles, fresh spinach, grated cheese and Sea Best cooked shrimp, this dish is a great “go to” dinner for busy nights. The red chili flakes brought a great touch of heat to the dish.
With over 50 easy to follow recipes on the Sea Best Seafood site, I am excited about adding some new dishes to our family dinners. My family (besides me since I’m a vegetarian) loves seafood. Actually, I love to cook it for them because it’s such a healthy meat. My husband catches a lot of our seafood living on the island but on those bad weeks where the waters are not cooperative, I have to buy our seafood. I will definitely be looking for these on my next grocery run! And I’m thinking my hubby would really dig those melts! Thanks for sharing!
