The holidays are finally over and things are slowly starting to get back to “normal” around here. Yesterday, I spent the entire day “decluttering” the house.    My husband was off work, so he and the girls spent the morning playing while I decluttered!  Before I knew it, it was lunchtime!  I needed a break, so I whipped up a quick lunch of  Tyson Mini Chicken sandwiches.

And of course, just like every family…we all wanted something different! We had some leftover bacon, so before I heated up the sandwiches, I warmed up the bacon – a perfect topping for these sandwiches!

My husband had his sandwich topped with mayo, bacon and cheese, and I opted for bacon, cheese and lettuce.  Paired with some potato chips, we each a great, quick lunch.

 

 

 

 

 

 

 

Maggie, my persnickity toddler, seemed a little surprised by having a sandwich, so she had what we lovingly called a “deconstructed chicken sandwich“.  It was the actual sandwich, but chopped up on a plate – including the cheese, ketchup and even the bun!  She loved it!

Soon after we cleaned up our lunch, I was back to cleaning out …making room for 2012!
