Recipe: Balsamic Chicken Pasta Salad

I love balsamic vinegar.  It gives meals such a refreshing taste – I especially love it on chicken.  This past weekend, we discovered a salad recipe that uses leftover rotisserie chicken, fresh mozzarella, tomatoes and bow tie noodles… and balsamic vinegar!

With no mayonnaise, this dish would be great for picnics.  We have already decided this is going to be our “go to” dish for outings on the boat this summer.

Balsamic Chicken Pasta Salad

Recipe: Balsamic Chicken Pasta Salad

Prep Time: 5 minutes

Total Time: 15 minutes

Ingredients

  • 8 ounces uncooked bow tie pasta
  • 2 cups chopped, cooked chicken
  • 4 ounces fresh mozzarella cheese, diced
  • 1 large tomato, chopped
  • 1/2 cup chopped fresh basil
  • 1/4 cup light balsamic vinaigrette
  • 1/2 teaspoon black pepper

Instructions

  1. Cook pasta.
  2. Drain and rinse under cold water until cool.
  3. While pasta cooks, combine remaining ingredients in large bowl.
  4. Add drained pasta to chicken mixture and toss well.

      I think the chicken really gives it a hearty feel to it. It could even be an entree I think!
