Recipe: Banana Nut Cinnamon Muffins

I love Bob Harper from The Biggest Loser.  He is always such a great motivator on the show and you can tell that he truly cares about the contestants.  Last year at BlogHer’11, Bob spoke at a breakfast session – it was so inspiring to hear him speak!

This past week, thanks to a great Klout perk, I received a copy of his new book – The Skinny Rules: The Simple, Nonnegotiable Principles for Getting to Thin(affiliate link).  The book has a great set of “rules” in order to lose weight, along with some core recipes.

These Banana Nut Cinnamon Muffins sounded like a great “on the go” breakfast meal, so I decided to give them a try. With applesauce, walnuts, banana and rolled oats – they are pretty tasty! I’ve already got them packed for Rob to take to work tomorrow!

Banana Nut Cinnamon Muffin Recipe


Recipe: Banana Nut Cinnamon Muffins

Ingredients

  • 1 small banana
  • 2 teaspoons cinnamon
  • 8 large egg whites (I used egg beater substitutes)
  • 1 cup rolled oats (I used Quaker)
  • 1/2 cup unsweetened applesauce
  • 2 tablespoons chopped walnuts

Instructions

  1. Preheat the oven to 350 degrees.
  2. Mash the banana in a small bowl with a fork.
  3. Mix all ingredients (except the walnuts) in a food processor.
  4. Mix walnuts into the muffin batter.
  5. Line muffin pan with paper liners.
  6. Divide mixture evenly. (I had enough for 12 muffins).
  7. Bake for 20 to 25 minutes.
