Recipe: Loaded Twice Baked Potatoes

We’ve had twice baked potatoes a number of times at friend’s houses and loved them! So, over the holidays my husband decided to create his own … and they’ve quickly become a family favorite!  Sour cream, chives, cheese and some bacon turns these regular potatoes into a loaded potato masterpiece!

Recipe for Loaded Twice Baked Potatoes

Loaded Twice Baked Potatoes

Prep Time: 30 minutes

Cook Time: 2 hours

Total Time: 2 hours, 30 minutes

Yield: 12 potato halves


  • 6 large baking potatoes
  • Two sticks of unsalted butter
  • 12oz grated cheese (we typically use cheddar)
  • 8oz sour cream
  • 1/8 cup chopped chives (or green onions)
  • Bacon bits
  • Salt and pepper
  • Garlic powder


  1. Sprinkle salt and garlic on potato
  2. Place two pats of butter on aluminum foil and wrap baked potatoes in foil
  3. Bake at 425degrees for 1 1/2 hours or until done (depending on size of potato)
  4. Unwrap potatoes from foil, cut lengthwise and let them cool
  5. Scoop potatoes into bowl, leaving 1/4 inch shell of potato
  6. Add butter, sour cream and 8oz of cheese, chives, garlic powder and bacon into potatoes
  7. Mix thoroughly and salt/pepper to taste
  8. Scoop mixture back into potato shells
  9. Bake at 350degrees for 25minutes or until heated through
  10. Add remaining cheese and bacon to top of potatoes
  11. Place back in over for an additional five minutes to melt the cheese
  12. Serve and enjoy!
