Did you know that October is National Pizza month? (Don’t worry, I didn’t know either until recently.) I did some searching this week for an easy, at-home pizza recipe and ran across one for a Caramelized Onions and Goat Cheese pizza. I tweaked the recipe a little bit to suit our family and started cooking!
I had never tried to caramelize onions before, but it was really pretty simple. I love goat cheese… and paired with the onions it’s a perfect match. This pizza make a great dinner for a Meatless Monday meal!
Recipe: Caramelized Onion and Goat Cheese Pizza
Ingredients
- 2 teaspoons olive oil
- 2 cups thinly sliced onion, separated into rings
- 1 Boboli pizza crust
- 1/2 jar of spaghetti/pizza sauce
- 1/4 cup chopped drained sun-dried tomatoes
- 2/3 cup crumbled goat cheese (add to taste)
- 1 T dried basil
Instructions
- Preheat oven to 450°.
- Heat olive oil in a large nonstick skillet over medium-high heat. Add onion; cover and cook for 3 minutes. Uncover and cook until golden brown, stirring frequently.
- Place the pizza crust on a baking sheet.
- Pour sauce on pizza crust. Top with onion and cheese.
- Top with dried basil.
- Bake at 450° for 10 minutes or until crust is golden brown.
